Is sushi rice gluten-free?

Plain white or brown rice is naturally gluten-free.

However, prepared sushi rice is rarely served plain. Chefs mix in seasoned vinegar, sugar, salt and sometimes cooking broth.

You must check these added ingredients and kitchen tools before ordering.

“Glutinous” does not mean gluten

“Glutinous” means sticky. The word does not mean that rice contains gluten.

Check the vinegar and seasoning

  • Distilled white vinegar and pure rice vinegar are naturally gluten-free.
  • Malt vinegar comes from barley and contains gluten.
  • Pre-seasoned sushi vinegar mixes may contain hidden wheat or grain-based flavorings. Ask staff to check the label.

Ask the kitchen these three questions

  1. What vinegar and seasonings are mixed into the sushi rice? Can you check the labels for wheat or barley?
  2. Do you add any soup stock, soy sauce or broth when cooking the rice?
  3. Can you use a clean rice paddle, a clean bowl and clean gloves for my order?

If you buy pre-made sushi at a grocery store, read the full ingredient list.

Plain rice packets may be safe, but the packaged soy sauce, ginger or toppings in the tray might contain wheat.
