GlutenFreeSushi

Is sushi gluten-free?

Sushi can be gluten-free, but it often contains hidden wheat.

Plain fish, rice and fresh vegetables do not contain gluten. Gluten usually hides in sauces, imitation crab and crunchy toppings.

Cross-contact can also happen when chefs touch foods with wheat and then touch your sushi.

Four things to check

Rice and seasoning

Chefs add vinegar and seasonings to sushi rice. Some vinegar mixes contain wheat or barley. Check sushi rice →

Fillings and crunchy toppings

Imitation crab often uses wheat starch. Tempura crunch, fried shrimp and spicy mixes can also have gluten. Compare sushi rolls →

Sauces and glazes

Regular soy sauce contains wheat. Sweet eel sauce and spicy mayo can also have gluten. Always check sauces mixed inside rolls or brushed on top. Check sushi sauces →

Kitchen preparation

Gluten can pass onto your food from hands, knives, cutting boards and rolling mats. Ask staff to use clean tools.
